So for the first day's recipes, I'm going to start out with last night's dinner... and we'll see where we go from there.
Last night I made grease-less fried chicken.
4 boneless skinless chicken breasts
8 cups corn flakes, crushed
2 tsp cumin
2 tsp season salt
1 tsp garlic powder
1 tsp montreal steak seasoning
1/2 tsp salt
1/2 tsp pepper
3 large eggs
Preheat oven to 350
First slice your chicken into slices accross the grain of the breast (they are easier to pull apart this way). Beat 3 eggs in one bowl and combine the rest of the ingredients in another bowl.
dip chicken in egg mixture and then roll in seasonings and cornflake mixture.
arrange in glass 8x8 pyrex pan and bake for 20 minutes. Toss pieces to change position and bake an additional 15-18 minutes (could be more depending on how thick your strips are, or less if they are really thin).
For the second recipe, you'll need the following
2 cups grape tomatoes, quartered
1/4 cup chopped yellow onion
fresh basil, chopped
1 Tbsp Olive Oil
1 tsp raw honey
Mix all ingredients in a chilled clear glass bowl, stir and serve :)
