Comfort Food...

So today I made a chicken noodle stew... we bought a rotisserie chicken last week and ate that for dinner one night (I think Thursday).. anyway, I made this yummy chicken salad with it yesterday with curry and apples and walnuts...

Last night I stuck the carcass in the crock pot with about 10 cups of water (enough to cover it)

and left it on low all night.

Today, I poured the stock through a large sieve and put the stock back in the crock pot to which I added 1 Tbsp Cumin, 1 tsp garlic powder, 1/2 tsp oregano, 1/2 tsp fresh pepper, and 1/2 tsp season salt. Then I mixed into the broth 1 bag of extra wide egg noodles, 1 lb of frozen soup vegetables, and I separated the meat from the bones, chopped it and put it all back together- leave it cooking on high for 2 hours and voila- dinner is served...

Curry Chicken Salad

1 cup Cubed Chicken breast
1/4 cup chopped celery
1 Tbsp minced onion
1/4 cup chopped apple
1 Tbsp chopped walnuts
(1/4 cup chopped grapes)
1 Tbsp yellow mustard
2 Tbsp mayonnaise
1/2 tsp curry powder
1/4 tsp salt
sprinkle fresh black pepper

Mix all ingredients in container and serve on multigrain bread lined with Romaine lettuce.
